About

The plain one, and the salt the rest of the range is built on. Seawater from the Great Australian Bight, dried down into soft flat flakes that break up between your fingers. Chemical free and preservative free, in a 120g kraft canister.

The water comes from the Great Australian Bight. It runs through a succession of ponds and evaporates in the sun. The crystals are then harvested, washed in sea water and dried.

The flakes stay soft and flat rather than hard, which is why they crumble in the fingers. Nothing is added, so there is no preservative and no chemical in the canister. The family bought their first salt works at Warooka in South Australia in 1957. Fields north of Whyalla and at Port Alma followed.

Keep it next to the stove for finishing. A pinch on sliced tomatoes with oil, on fresh bread and butter, or on grilled fish as it comes off the heat. Seal it after use and keep it away from moisture or the flakes clump.

Producer note

Four generations of Olssons, from a Parramatta grocer to solar salt fields in South Australia and Queensland. The family moved into salt in 1948 and has been making these flakes since, with no chemicals or preservatives in them.
