About
Peat with freshness and citrus lift. The way into Islay smoke for the curious.
Caol Ila is an Islay single malt with peat smoke held in a lighter frame. The official twelve-year-old expression is pale straw in colour and balances fresh fruit with a smooth body. Citrus, almond oil, olive oil and a measured smoky note emerge as it opens.
This is a good pour for someone learning what peated whisky can do without an overwhelming blast of smoke. Serve it neat in a rocks glass. Add a splash of water if you want the aromatic oils and fruit to open further. Smoked fish or aged cheddar make sensible partners. It also works as a slow after-dinner pour.
