About

Oloroso is the fully-oxidative dry sherry style — no flor protection, just slow oxygen ageing for years in cask. Walnut, dried fig, leather, salt, long savoury finish. Pour with hard cheese, mushroom dishes, slow-cooked meats.

Gutiérrez Colosía are based in El Puerto de Santa María (one of the three sherry towns), and are noted for their seafront ageing cellars.
