About
Cabernet Sauvignon from mature vines — 30 years old at minimum — on classic gravelly loam between the capes, spanning the Yallingup and Wilyabrup sub-regions at 80 to 100 metres. Hand-picked, berry-sorted fruit ferments as whole berries in open fermenters for 20 to 30 days at ambient cellar temperature, then spends 11 months in 225-litre oak barrels before settling naturally in tank and a light filtration. Supple and smooth, with vibrant primary mulberry fruit and dark chocolate. Just 60 dozen made, sealed under wax-topped DIAM.
This is the first vintage of Between the Capes, and Nic Peterkin made it as the early-drinking sibling to his flagship Cabernet. That wine gets 18 months in barrel. This one gets 11, which is the whole point: the mulberry fruit stays bright and the wine is ready when you buy it.
The fruit is cooled straight after picking, then sorted twice by hand, first by bunch and then berry by berry. Only two barrels were chosen for the final blend, which is why there are so few bottles. Nic works from Caves Road at Wilyabrup, and his line is minimal intervention with maximum flavour.
Serve this a touch below room temperature. It suits lamb, a steak off the barbecue, or a mushroom and lentil pie.
Producer note
