The first drink Heaps Normal has made that is not beer, a brut style non-alcoholic sparkling built from prosecco grapes. Eighteen months of work and a research partnership with the Australian Wine Research Institute went into it. Citrus peel and green apple on the nose, creamy acidity, dry finish.
Heaps Normal spent eighteen months and two tonnes of prosecco grapes getting to this bottle. Plenty of batches along the way did not make it. Head of wine Ned Brooks and co-founder Ben Holdstock developed it in house. They worked with the No-Low Wine Research Centre at the Australian Wine Research Institute, alongside winemakers, bartenders and organic chemists.
In the glass it is pale straw with a fine bead. Citrus peel, lemon sorbet and green apple come first, then apple and pear on the palate with a little lemon blossom and jasmine. Acidity runs creamy rather than sharp and the finish is dry, which is what earns it the brut description.
It is vegan and gluten free. Serve it as cold as you would any sparkling and use it wherever a brut prosecco would go.
Producer note
Heaps Normal started in 2020 with Quiet XPA and built its name on non-alcoholic beer. It runs out of Marrickville in Sydney, where it also keeps a bar called the Heaps Normal Health Club, and High Hopes is its first move beyond brewing.
