About

The big red end of the NON range at 0.0%, lightly sparkling, made from oven stewed cherries, cold brew coffee and a spice mix. No sugar is added, so the fruit lands dark and savoury instead of sweet. Pour it where you would otherwise pour a red.

Cherries go into the oven for two hours with pink peppercorn, garam masala, allspice and nutmeg. That slow cooking is where the stewed fruit character comes from, and the spices sit behind it on the nose.

Arabica coffee is added as cold brew, which brings tannin and a cocoa note. That is the part doing the work of a red wine. Semillon from the Barossa, picked before it ripens, is pressed for the verjus that supplies acidity, and Murray River salt adds the savoury lift. No fermentation happens at any stage and no sugar goes in at the end.

There is a light sparkle, so keep it cold and use a wine glass. Charcuterie, roasted mushrooms and slow cooked beef all work beside it.

Producer note

The house rule at NON is made, not de-alcoholised. No wine is ever made and then stripped, and nothing is fermented at any point. Drinks are built from whole fruit, herbs, spice, tea and verjus rather than from concentrates.
