Juniper and citrus, none of the alcohol, built for tonic
$49.00
700ml0.4% alc.About
Lyre's take on a London Dry, at under 0.4 per cent alcohol. Juniper leads, citrus peel and orange blossom sit around it, and pepperberry warms the finish. Made for mixing rather than sipping neat, so treat it as the gin in the drink.
Lyre's does not make a spirit and then strip the alcohol out. The flavour is built from natural essences, extracts and distillates, blended with water and a little glucose syrup. The drink arrives at zero rather than getting there. Quinine is on the ingredient list, which adds a faint bitter edge and helps it hold its shape once tonic goes in.
The aim is the dry end of the gin shelf rather than a sweet substitute. Juniper and citrus land first, there are earthy notes through the middle, and the pepperberry warmth carries the finish.
Pour it long over ice with a tonic you actually like, and garnish with pink grapefruit and rosemary. It will also stand in for gin in a Negroni or a Collins.
Producer note
Lyre's was started in 2019 by two Australians, Mark Livings and Carl Hartmann, and named after the lyrebird, the country's great mimic. The company is now based in the United Kingdom and makes its spirits in Australia, the USA, the UK and Europe.
