About

Estate-grown Cortese from a single, sun-exposed vineyard in the heart of Gavi, where 30-year-old vines sit on classic Cessola marls and sandy soils. Hand-harvested, cold-macerated for 12 hours and gently basket-pressed, then fermented cool in stainless steel and rested five months on fine lees. Delicate florals of citrus, honeysuckle, apple and fresh herbs over a refreshing, bright palate — depth of fruit underpinned by vibrant lemon-zest acidity and a mineral core.

Sorì della Monaca is a Cortese from the Gavi hills, where Cascina delle Monache works limestone and sandy ground. It was the estate's first Gavi, made by selecting its strongest vineyard parcels. The site is sun-exposed and the vines are around 30 years old.

Hand-picked fruit spends 12 hours in cold maceration before gentle basket pressing. Fermentation takes place in stainless steel, followed by five months on fine lees. That gives the wine floral detail and a mineral, lemon-edged finish without oak weight. The family farm was planted from 1978, and Tiziano now makes two Gavi bottlings there. Serve it at 10 to 12 degrees with fresh fish, simple cheeses, or vegetable dishes.

Producer note

Cascina delle Monache is the project of young vigneron Tiziano on the Arecco family farm, planted since 1978 — four hectares producing two Gavi del Comune di Gavi bottlings, of which Sori della Monaca was the first, crafted in 2018.
