About
Cool-climate Tasmanian Chardonnay for drinkers who want acid and structure, not butter. Lemon, white peach, mineral cut, real persistence — age-worthy without being austere.
The Derwent Valley supplies 85 percent of the fruit, with the rest split evenly between the Coal River Valley and the North West. Hughes & Hughes is the second label of Mewstone, the Hughes family vineyard on the D'Entrecasteaux Channel. Jonny Hughes makes it after seven years as assistant winemaker at Moorilla.
Most of the fruit, 85 percent, was whole-bunch pressed. The rest sat cold on its skins for five days, which adds a savoury edge. Every parcel fermented with wild yeast in oak, about 15 percent of it new. The wine went through full malolactic conversion over six months on lees and was bottled unfined. It sits at 13 percent alcohol.
Different Drop finds white peach and grapefruit with almond and spice, creamy but still taut. Pour it with roast chicken or pan-fried fish. It will hold in the cellar for several years if you can wait.
