About

Assyrtiko grown inland in Thessaly rather than out on Santorini, at the foot of Mount Olympus. Crisp and very high in acid, with pear, white flowers, a faint herbal note and a salty, flinty close. Organic fruit and native yeast, with nothing heavy handed done to it.

The Zafeirakis vineyards sit in the foothills of Mount Olympus, inside the Tyrnavos zone in Thessaly. The Paleomylos site is sandy clay carrying a lot of flint and very little calcium. The estate credits that ground with early ripening and a brackish character. Limestone runs through the area as well.

The family has grown grapes around Tyrnavos for more than a hundred years, and Christos Zafeirakis is the fourth generation. He read oenology in Athens, studied and worked in Italy, then came home in 2005 and planted the first organic vineyard. Biohellas has certified the fruit organic since then and biodynamic practices came in from 2019. Ferments run on the vineyard's own yeasts.

Drink it cold and drink it young. Oysters, grilled octopus, or anything off the barbecue with a lemon beside it.

Producer note

Ktima Zafeirakis is a fourth generation family estate at Tyrnavos in Thessaly, farming more than twelve hectares. Christos Zafeirakis came back from studying in Italy in 2005 and is known for bringing indigenous Greek varieties back into production.
