About
A liquorice liqueur from Villa de Varda, the Dolzan family distillery at Mezzolombardo in Trentino. The house made its name on grappa and this sits at the after dinner end of the range.
Villa de Varda works out of Mezzolombardo, on Via Rotaliana, in Trentino. The family has been distilling there since the early 1800s, and Mauro Dolzan is the sixth generation to run the place.
The house is built on grappa. Its production method is patented and runs to six stages. It starts with small boilers where steam meets the grape skins, and the cut at the end keeps only the heart of the run. Water from the Paganella aquifer brings the spirit down to strength. Herbal bitters and a line of mountain whiskies come off the same site.
The liquorice bottling sits in that liqueur range. Treat it as an after dinner pour. Keep it cold and serve it neat in a small glass.
Producer note
The distillery takes its name from a villa that belonged to local nobility, though the family behind it are the Dolzans. They keep a museum on site at Mezzolombardo holding around sixteen hundred pieces of old wine and grappa gear.
