About

Australian-made Col Fondo: cloudy, bottle-fermented to dryness. Apple, citrus, gentle yeasty notes, clean fizz. Easy drinking, food-friendly, refreshingly simple.

This is Prosecco from the King Valley, off a north-facing vineyard that Dino Cavedon planted in 1977 with his father and brother. Dino worked with the Department of Agriculture on trellising and was among the first in the valley to plant Italian varieties.

The family story runs back further. Dino's mother Adelia arrived in the Ovens Valley from Italy in 1950 and farmed tobacco before pushing the family towards grapes. When Dino was ready to retire, his daughter Pia and her husband Gabe O'Brien moved back from Torquay in 2017 to take over. Gabe taught himself winemaking from 2018 with help from neighbours and books.

He makes two bottle-fermented Proseccos. One is disgorged with zero dosage. This one is not disgorged, so the lees stay in the bottle and give the wine its cloud and texture.
